张文宏说,分餐是一个概念。一起也不行。比如说豆沙甜汤,每个人用自己的勺子去舀,那这锅豆沙汤团,就是一个洗调羹的水。但是,我们在外面觉得恶心,在家往往就不觉得。
张文宏表示,拿自己筷子给别人夹菜,在中国认为是好客的表现。“你说,如果吴院长(吴凡)给我夹菜,我到底吃还是不吃?
张文宏强调,新冠肺炎疫情大部分是通过呼吸道传播,但唾液里有大量的病毒,这次疫情很多人就是一家人得病。所以从流行病学的角度来说,分餐制是很重要的事情。“最可怕的是什么?是别人用自己的筷子给你夹菜。”
张文宏说,我们读的这个专业,所以对用餐的卫生标准更严格。你看到的是菜是酒,我看到的全是病毒细菌,还要夹给我吃,怎么可能?“现阶段,吃饭用分餐制,是我们可以做到的。所以分餐制不是倡导不倡导的问题,是你一定要做的事情。你今天不分餐,就是裸奔,很危险。”

与张文宏共同出席讲坛的复旦大学上海医学院副院长吴凡则表示,不能封锁生活,生活要缤纷多彩,两者要平衡。公勺公筷分餐制,就是找到平衡点。

中国的传统习俗,关系好才一锅吃,分餐感情在哪里?其实不然。吴凡表示,分餐不仅防止传染,还涉及营养问题。分餐好处,吃多少,都在眼前,看到总量,也看到不同菜的搭配。品种上有概念,总量也有控制,对摄入优质蛋白有所帮助。
分餐制如何保证不同群体的健康饮食摄入?吴凡回答,吃得最健康的是老年人,各类营养比较均衡;饮食不太健康的群体是年轻人,有频繁在外就餐的特点。
吴凡建议,第一,膳食总体要平衡,什么都吃,品种要多、颜色要多,谷物、杂粮、肉类等颜色都要多、要杂。
第二,选择优质蛋白,要摄入足够的优质蛋白,蛋、奶、鱼和豆类都是很好的优质蛋白。上海成年人饮食问题在于,脂肪摄入太多,这在于两个误区。第一个误区,大家喜欢吃排骨。千万不要觉得排骨就是瘦肉或骨头,排骨里的脂肪含量其实是很高的。第二个误区,用的食用油太多。
